With nearly 30 years of experience in Napa Valley’s hospitality scene, Roman Flores is the soul of Market Restaurant in St. Helena, CA. As Managing Partner, he ensures that every guest feels at home the moment they walk through the doors. His warm personality and dedication to exceptional hospitality have made Market a local favorite and a must-visit dining destination in Napa Valley.

Roman’s journey began in 1990, when he moved to St. Helena and started working as a dishwasher at Spring Street Restaurant. His passion for the industry drove him to quickly rise through the ranks, eventually working at Rutherford Grill, Napa Valley Grille, Bistro Jeanty, and several other top establishments. After gaining extensive experience in both restaurants and hotels, he returned to the culinary world in 2008 when he and his brother-in-law, Chef Ernesto Martinez, took ownership of Market.

Beyond the restaurant, Roman has another passion—classic cars. If you see a beautifully restored classic parked on Main Street in St. Helena, you can bet Roman is inside Market, greeting guests with his signature hospitality. Just like his cars, Roman believes in timeless quality, attention to detail, and making sure every guest’s experience is unforgettable.
